Open Fermentation
Ashton is one the largest open fermentation breweries in North America, which means that our fermentation tanks have no lid and are open to the environment. This is the traditional way beer was produced for centuries and is still common in Germany, Belgium and the UK.
Open fermentation in our broad and shallow tanks encourages the formation of desirable esters– that signature the fruity aroma you will notice in all of Ashton’s beers. Our open tanks also allow us to keep a close eye on the fermentation process to monitor the health of our yeast and the progress of each brew. We are able collect yeast from the top of the tank during fermentation, where the yeast is healthier than the yeast at the bottom of the tank. Unlike most modern breweries that are limited to re-using their yeast just a few batches of beer before throwing it away, at Ashton our yeast thrives in our open fermenters, and we are generations into our original Ringwood yeast, and over the years it has developed into a great house yeast that is unique to Ashton Brewing Company.

Amber Ale

Our Amber Ale was the first brew we made at Ashton, it is the core of our brewery and has always been the most popular brand. An excellent introduction into the crafter beer world, this beer has light notes, subtle flavours, and a clean finish.
Beckwith Ale
ABV 4% | IBU25 | SRM 11
Named after the township of Beckwith where the Ashton brewery presides, this lightly hopped beer is an absolute palate teaser. A malty session style ale with a clean finish, we promise it will keep you coming back for more.
Blackstone Ale
ABV 5% | IBU21 | SRM 5
This beer is near and dear to us here at Ashton. A portion of the proceeds from this beer go towards the Blackstone Association which helps past and present military members. It is a hop forward ale with a nice citrus finish.
Blueberry Wheat Ale
ABV 5% | IBU 4 | SRM 9
We kept the hop and malt profile light on this brand to let the blueberry notes shine through. The wheat malt lends this beer to a smooth and creamy mouth feel and the blueberry addition creates subtle aroma and flavour that appeals to everyone.
Brown Ale
ABV 5% | IBU 16 | SRM 11
Our Brown ale is a full-bodied beer with caramel, coffee, and chocolate flavours. We use roasted and chocolate malts and combined them with European hops to create a robust, yet balanced and easy drinking beer.
Cider
ABV 4.5% | Sugars 5g/L
Started in 2022, Cider is one of the newest ventures for Ashton. We use freshly pressed Ontario apples to create a crisp, lightly sweet cider with a smooth dry finish.
Cream Ale
ABV 5% | IBU 15 | SRM 5
An ale for lager lovers. Clean and crisp with soft hop and malt flavours, our cream ale uses barley and wheat malts to produce a golden biscuit colour, and our hops deliver a well-balanced undertone. This beer is best served “gold and cold!”
IPA
ABV 5% | IBU 35 | SRM 7
This style of beer stays true to its English roots. This beer more balanced and easy drinking than the North American IPAs. We balance citrus and herbal hop aromas with toffee and biscuit malts. $0.25 from every can sold goes to helping with breast cancer research.
Irene’s Red
ABV 5% | IBU 22 | SRM 12
This beer celebrates the success of Irene’s Pub and our Irish heritage at the same time. This rebellious red ale is designed to satisfy all pub lovers. With toffee and caramel notes and a dry, moderate finish, we think it’s a hidden gem.
Raspberry Sour Ale
ABV 4% | IBU 14 | SRM 4
Our sour with make you “pucker up” but in a good way. We adjust the pH to give the beer a tart, acidic taste and then we add raspberries and black cherries to generate a perfect balance of sweet and sour.
Seltzer
ABV 5% | Sugars 5g/L
If you’re looking for a light, low sugar alternative to beer, seltzer is the way to go. This drink puts taste at a premium by combining the refreshing hydrating qualities of carbonated water with the delicious fruit flavours of lemon and lime.
Session
ABV 4% | IBU 14 | SRM 4
Light, crisp, and refreshing, this is Ashton’s easy drinking favourite. It’s a great beer to enjoy on a night out with friends. Not too bitter, not too hoppy, and not too malty, this beer is perfect for the new craft beer fan.
Stout
ABV 5.5% | IBU 70 | SRM 42
This is one of the hidden secrets of Ashton. We’ve made a classic stout with hints of chocolate, coffee, and licorice, but with our open fermentation process we can create a fruity aroma that hits you when you pull this pint close to your mouth.
Coffee
ABV 5% | IBU 35 | SRM 25
We collaborate with CC’s Corner in Richmond, Ontario to bring this rich dark porter to life. More mellow than a stout, the porter has a rich aroma and with CC’s coffee beans has the comfort of coffee. What more could you ask for!

Maple
ABV 5% | IBU15 | SRM 12
McNaughton Sugar Bush in Lanark County provides us with the syrup for this cherished ale. A dry medium bodied beer with a crisp hoppy bitterness lends itself perfectly to the maple syrup to generate maple and toffee aromas and subtle notes of fruit.

Pumpkin
ABV 5% | IBU 19 | SRM 5
This pint is the highlight of every year during harvest season. We combine pumpkin puree and spice to give some zing to this unfiltered beer. It is a great way to end off the summer and give you that warm and fuzzy feeling going into fall.

BIPA
ABV 5.5% | IBU60 | SRM 33
This beer is a twist on the standard IPA. With lots of floral and piney hops, it creates a big, bodied beer with bold earthy and baking chocolate undertones. Our Black IPA has a strong malt body and a smooth caramel finish.

ECIPA

Our East Coast IPA has become much more popular than it’s West Coast cousin. We bring in citrus flavoured hops specifically for the unique style of this beer. Unfiltered, with big aroma and big flavour this is one of Ashton’s cult classics.

Rye IPA
ABV 5.5% | IBU 60 | SRM 8
Smooth hoppy flavours blended with the best of rye malts makes this a brewers’ favourite. Light bodied, somewhat dry and a spicy flavour makes this one special. We think there is no better way to light a fire under your belly in the lingering winter months.

WCIPA

Hops, hops, and more hops! This beer explores some of the amazing citrus and floral flavours of the American West Coast. Refreshing, clean and unfiltered, our West Coast IPA bring bold hop aroma and piney notes making it one of our brewers’ favourite choices.

Red Rye
ABV 4.5% | IBU 35 | SRM 17
This beer has a beautiful copper, red appearance and a light peppery, slightly roasty taste. We lighten up the hop on this brew to let the rye malt shine. A classic fall beer, this one will have you looking for a second pint.

Radler
ABV 2.5% | IBU 13 | SRM 3
This is the perfect summer drink. It’s awesome to enjoy out on the patio with some friends. We use Session ale as the base for the beer and dilute the alcohol by adding lemonade and black cherries to create a low alcohol radler with tartness and sweetness.

Springbock

This big beer is a flavourful crowd pleaser that will not disappoint. Ashton’s spin on a Maibock stays true to its roots. The tradition of this beer is to add everything but the kitchen sink and that’s exactly what we do!

Winter
ABV 5% | IBU 10 | SRM 20
A perfect start to winter. This unfiltered beer has a crisp and carbonated body with a subtle festive finish. We find the secret spices to creating that warm, fuzzy feeling are the hints of cinnamon and cacao that are added to the brew.
